DN 15 Kvs 4.0 when the pipe is already DN 15 or design Q ≤ 2.5 m³/h. DN 20 Kvs 6.3 when the pipe is DN 20 or Q > 3 m³/h. Do not down-size the DN just to preserve authority.

Suitable for a potable-water DHW scheme?
V241 DZR brass body is not certified for direct potable contact. In DHW schemes the valve sits on the heating (primary) side — no potable contact.
